The quick google I did seemed to imply bitter, but maybe it just meant in reference to otherwise sweet alcohols.
I... Still don't get it? How is the flavour profile related at all?

Before I caught the obvious joke here, I thought the bartender character was an AFAB called "Martini" and it was a slightly more risque joke. I accept this outcome.
