I've tried flaxseed and chiaseed eggs and they don't hold a candle to eggs as binder in food, but besides for cooking recipes, I don't know why people are freaking out so much. It's worth getting 4 chickens for your backyard, I can highly recommend it, both for companionship but also the free eggs, and they're a great way of disposing of kitchen waste as they eat just about anything. I know this is a vegan sublemmy, I'm just saying, if you want eggs, earn it.
There's a product called Ener-G Egg Replacer and works perfectly for baking and baking only. Obviously it doesn't work for making things tasty "eggy" like in an egg bagel or challah, but it'll work for any other baked good without issue.
I use it in my vegan baking all the time. With the price of eggs, I've been using it in lieu of eggs in my non vegan baked goods too.
