MeMondays was people introducing themselves with a pic and some info.

FapDayFriday was for posting porn you found recently. Just learned this is a SFW instance, so maybe not feasible here.

There were other weekly events, but I can only remember those and Tech Tuesday to talk about technology.

This is indeed a SFW instance, though I would not be against NSFW in designated topics. That would be fine. As long as the sub itself is not inundated with NSFW content.

I do like your suggestions, though I don't think we have enough of a community for it yet...
