What pisses me is the game lets me kill everyone except the king ? I'd rather spare some innocent pawns to be honest

Technically, you capture them and not kill. I think there's even a version of chess where you can convert captured pieces to your side and place them back on the board (or was it 2v2 chess where you can pass captured pieces to your ally?)
