This isn’t l very interesting, or is it? That appears to be cabbage and it’s frequently used in bamboo steamers so the dumpling won’t stick to the steamer. Keeping hot dumplings from sticking or melting to styrofoam is also a good use.

It's the same gyoza that you buy at Costco, put into a carcinogenic container, ontop of a soggy leaf. Sold for approx 1000% markup, or 999999999% markup if bought through Uber Eats/DoorDash.
