A lot of subreddits that have been said I'll also miss, but for me personally I'll miss the Math based subreddits I used to follow the most. r/badmath was a particular fav. I don't have many "math people" in my friend group so it was nice to have a place to chat about differnet math topics and learn. But hey, I'm sure with time we can expect a lot of those subreddits to find a home elsewhere. Hopefully here. I like it a lot so far!
I'm going to miss all of my smaller history/archaeology related subreddits.
r/FunnyAnimals. For some reason, it made me sleep better at nights. A few funny videos with pets and I could end my day with a smile.
r/cfb. That sub is so fun during the college football season, even in the off-season it's an entertaining place. It will be sorely missed.
Emulation-related subreddits, for one.
r/houseplants and r/food. I loved browsing aimlessly through all the pictures and seeing pets in the background.
I'm going to miss all the ones that I subscribed to! Hopefully things pick up here and those communities will rebuild themselves here to some extent.

And I'll miss the history, like, we have subreddits going years back. Subreddits full of stories and whatnot.
Hopefully it kinda mulls over in a few days, I dont really see it resulting in anything too permanent. Though I'm often wrong.

r/notjustbikes. The man himself no longer wants to use reddit without third-party clients or moderate the community without access to the API, so the community is basically gone forever unless reddit decides to revert the change, which won't happen. It was the best urbanist sub and nothing can quite replace it.
Reminds me that r/changemyview also really requires a large pool of participants to have value... Damn, I really liked that subreddit. I feel like it made me a better person.
artisanvideos. I love a good japanese watch maker making a wooden cabinet in a rainforest with rocks as tools.

Leafs. It's either that or Twitter, which I will certainly not use.
Luckily there's a Sports bot on Mastodon that duplicates Twitter posts from NHL and Leafs accounts. Will be good enough for me.
