Was looking into trying some digital modes and even logging while mobile (POTA/SOTA) or just on the road. I’ve also heard people use android devices as well.

I use a little avita tablet w/keyboard.

It has the benefit of being inexpensive and running on 12v.

I use it mostly for ft8 and logging.

Usually my XPS 13. I also have a Latitude 7470 which is dedicated to EMCOMM and has software loaded, but it's not a touchscreen. I picked up a Latitude 7212 Rugged but it's not quite set up, I'd like to get a keyboard for it.

I've tried doing digital with a raspberry pi and using VNC viewer on my phone to control it. It's worked at home, but I've had issues with the sound card and CAT interface on summits. Still don't have it working well.

For logging, I like pen and paper, since I can't type fast enough on my phone. I wrote a little python logger (on GitHub somewhere) to make it easier to get logs in the formats needed for SOTA/POTA/contests.
