Ohhh great point about the tank. I assumed the sink hookup would be universal but apparently not

That's the beauty about this model. You have options. This is what comes with it to help fill it up without it spilling everywhere.

When you're done filling it up, it will beep and you lift the funnel thing off (it just sits on there) and you put the cap on. Then ready to go. I mainly use the 1 hour function.

Do you fill it up with the hottest water you can, or does it just heat up whatever water it has like a conventional dishwasher?

Cold water. It has a built-in heater.
