Stable Diffusion might as well have just copy and pasted official art as its output for this prompt. Which is one thing when a fan does it and posts it for free online (like OP), and SD is obviously open source and free to use for individuals, but I wonder what would happen if someone using the corporate license did this same thing? Or an individual sold the art generated as part of an indie game or fanfic or whatever?

All fan art production is technically copyright infringement. Companies usually just overlook it.

Depends on the country, in America Fair Use guidelines protect uses like this. When fan artists start running into trouble is when they start monetizing the art or when they start "decreasing marketability" of the characters, aka, make too many lewds or in some cases just get too popular and the corporate ghouls can argue they're harming sales of their own products as a result.

But most fan art probably wouldn't pass mustard for fair use. They're just illustrations that aren't really trying to do anything transformative or make any commentary. If they wanted, rights holders could put an end to fan art at any point. The excuses are to make the decisions more palatable for the public.
