Canada is as much of a vassal of the US as the EU, and it's highly unlikely that it would be allowed to spurn the US in this way.
China is indeed a much better partner than the US, but in the long run Europe needs to figure out how to become self sufficient if it ever wants to be genuinely sovereign. This means figuring out how to produce cheap energy domestically and creating essential industries that can produce things people need. So far, it's not the direction things are moving in.
