Nothing illegal and I don't wanna hide myself from companies or governments or anything, I just don't want the recipient to know any personal info about me more than I wanna share

Crypto isn't an option

Edit: Sending/handing cash isn't an option either

That's not true. They'll only be discarded if they are undeliverable. You can send a normal letter in the US through the USPS without a return address.

A lot of things do need a return address. But, not simple letters.
