It is a good list. I was mostly curious about where others from literature.cafe have landed -- if they have Mastodon accounts at all. I already have an account on esperanto.masto.host, but I'm also looking for an instance where posts in other languages are welcome. Mastodon.art looks good.
I wouldn't recommend that instance, but that's just me.

I am on Mastodon.social and have no clue regarding where to migrate. Have you managed to shortlist any instances from the fedipact page? I joined Mastodon after lemmy, so I've been there for a short while and have no clue about other instances.
I'm biased but I would recommend blajah.zone
