I'm not really sure why you'd choose to run ubuntu if you're going to go this far to avoid using one of it's core products.

Well, you might not have chosen to run Ubuntu. At $DAYJOB, we can get a Linux laptop, but only with Ubuntu. I'm really not a fan of Ubuntu, but it is less of a pain in the ass than running Windows with a Linux VM.
That makes sense
Do you throw away a perfectly good burger because there is a single ingredient you don't like, or do you pick it off and enjoy the rest of your amazing meal?
Why not just use an Ubuntu based distro without snaps installed? I'm sure someone's made one some where.
There are, but the default Ubuntu still has the most support. ESM, 5 years of support, and the newest Ubuntu versions as soon as they come. Despite how good some Ubuntu based distro's are, (I love Pop_OS!, Linux Mint, and others) they will never have the 100% support and help you get by using default Ubuntu.
I mean when the same place sells that exact burger but without the single ingredient you don't like it would make more sense to get that instead
It would be like if you could get a almost identical burger from another place without the ingredient you don't like. It is not 100% like the burger you so dearly love, and it is made by another place.
