LineageOS vs Sailfish OS - Which one?

Sailfish OS is proprietary. It goes in the trash. If you want "Real Linux™" consider Mobian, postmarketOS, or Ubuntu Touch.

GrapheneOS or CalyxOS to give options I recommend more.

My only problem with Graphene is that I can't install MicroG

I don't understand, if you're willing to consider non-Android OS's, then you're willing to go without microG or Google Services?

I will quote ajz's suggestion for OmniROM, and one recommendation by me being DivestOS.

Other option would be LineageOS, but with that you are stuck with the phone models that are most used in custom ROM community. These will be most likely Xiaomis or Motorolas.
