I think the hardest thing for me would be going without maps. I'd get lost all the time. Heck, I already do WITH the app xD

You know, I coulda also sworn I read that it was started in the US (New York).. but now it says it is the main branch is in the Netherlands. I do still use it ocassionally though.

I've only used AnySoftKeyboard, but I will definitely try these other ones out. Update: I have tried SimpleKeyboard, Openboard, and FlorisBoard and have now switched to the last option!
