I second Krastorio 2 as a good first step out of vanilla. I've also played Industrial Revolution, which was OK but I didn't finish it. I played SE with my partner but it was way too complicated and difficult for me. You have to really understand how to program using circuit networks.

Baketorio was kind of funny. You have to make bread, desserts, milk, etc.

I think there's are multiple Lego games that do couch coop that way and yeah, it works pretty well.
