- Not sure if the installer would run, you may have to disable secure boot just for that. But you can run Pop with secure boot although there is no built in support. You will have to sign the kernel yourself everytime there's a new version.
- Yes, from the custom install option you can set up the partitions however you like on the drives you select. If you don't want to overwrite the Windows drive by mistake, you can physically disconnect it before installing Pop.

Sounds like Shattered Pixel Dungeon. The code is open source (since it's a port of the original Pixel Dungeon which is also open source) and a Java version and .apk are freely available to download from github. But it is also being sold on mobile/Steam/GOG, and I think the dev is making a bit of money of it (enough to go on developing, in any case).
Probably the Quest for Glory series for me. Played them so many times that I can just pick up any one them with any character and get sucked right back in to the game. I've had an itch lately to do a full playthrough of all 5 games after not touching them for a long time but I have little free time and too much backlog...
What a great game. It manages to do what very few games even try, while keeping the same basic platformer controls each level feels fresh and has its own unique experience. I think even the sequel, although more polished and very enjoyable, fails to capture that feeling. I've completed Psychonauts to level 101 so many times over the year, I envy you for getting to experience it for the first time.
I've translated the subtitles for Troll Bridge for a screening at a local scifi/fantasy con, and I've watched it so many time while working on it so it's pretty much engraved in my mind. So I guess that's my favorite.
From the Sky adaptations, Going Postal and Hogfather are quite good and fun to watch. I guess they didn't have a huge budget so it can look a little cheap in some parts, but the script and acting make up for it (also Going Postal has Claire Foy who is amazing). Colour of Magic is... fine, but not as good. Maybe because it's based on an earlier book. But something feels off with that one.
I never liked the Cosgrove Hall animated movies. They're ugly and surprisingly boring even though they take a lot of the dialog directly from the books.
(not Discworld, but) Johnny and the Bomb mini series is also nice. Not as deep as the book but a fun kids movie. Shame they didn't do the other two.
