So, for me it breaks down to roughly 3 "sections" of their age and progress.
new born - up till they can sleep over night: you play when it's your shift to do things(milk/change diaper/put them to sleep again) because once you get a hang of it, if you are wake and not too tired, you can play a little bit to make sure they don't puke the milk they just drank and then go sleep again if you are tired. I think I played a couple games while my son sleep in the rockable car seat thing.(that has a cover so TV light won't wake him. (your button/stick sound also serve as background noise. XD And when they do the day time sleeping you can play as well if you don't have to work. (say weekends/holidays/parental leave)
sleep over night - before they can go to day care: since they needs like 12~14 hours sleep < 3yo, so you can play after they go sleep and before they wake up. They will usually also have 1~2 hours nap time during the day, so you can play around that time as well. (up till here is the play during their sleep pattern)
when they can go to day care - 12yo: during this time you can probably introduce them to gaming, you would still need to play mature games(blood/gore/scary stuff) during their sleep time, but you can let them play progressively harder games that can help a lot of area of their development. For a children above say 5 yo they can already play games really well.(even on full size controller, as long as they don't need to use every button/triggers, so picking the right game is important) My son has some language development issues, I also use open world games etc to "direct" me where to go, tell me what things to do etc. He of course would like to just play himself, but I basically make him has to "tell me" what to do or get some place/things before he can take over. Easy and colorful games are usually really good candidate.(Astro's playroom on PS5 or Mario Odyssey are both really good candidate. I hope PC have similar quality games. Kids usually don't really care about graphics, so older games works as well. )
After 12, well, hope you can keep up with their gaming. My son improved so fast(currently 7yo) that I think his hand size and the worse quality smaller gamepad is giving him a handicap. (he got upset when I ask him to fly just 3 rings over Rocket League's workshop map. and now he is able to fly through most workshop rings map without issue. only those that fly straight down and change direction give him issues, but even I would have some trouble with that as well. )
