Surely at some point keepers are just gonna speculate on the near post finish and dive that way, aren't they?

leaving the far post completely open? I imagine a player at his level will sense that and know what to do about it.

No, the way to defend him is either a fast defender and tackle him before he gets to such a dangerous position (its been done before, but requires top quality defenders), or to never let him have a 1v1 like that.
