I nominate me to go first. Okay.
I'm not currently growing anything but I plan on starting up an grey oyster mushroom grow. I'll probably just buy a pre-colonized block and then grab some spore prints or make a slurry to continue it. I'd like to experiment with different grow mediums and maybe use my 3D printer to create molds and make mycelium sculptures!
The sculpture thing sounds interesting!
I bought one of those oyster mushroom grow kits a couple of years ago. Everything worked great and the mushrooms were good. As we get more into self-sufficiency, I'll probably try a few others and see how it goes.
Lion's Mane is another fun one to try that usually comes in grow kits. The cool thing is that once the blocks are spent (after 3-4 flushes), you can crumble the whole thing up and bury it or throw it in a plant pot and you'll get one or two other smaller flushes.
