Say we crush the rest of the season. Drop low in the draft, and can't trade up and draft a new QB? Are there any half decent FAs coming up in the off season or do we stick with AOC/Jimmy G?

There is plenty of QB’s that will be available in the next draft, it’s all in how you coach them if they’re successful or not
