I usually build drawbridges separating the surface and the lower biomes for exactly this situation. Is there a chance I'll have twenty dwarves chewed up and traumatize their families? Yes. But my crossbowmen will kill a thousand hellbeasts and titans before we lose a hundred.
Also keep a bunch of wardogs at the entrances.
