I have about 1270g of pork belly which is defrosted
The recipe I have calls for 700g of pork belly and I'm curious if I should double my braising liquid or keep it the same and add more water let it braise for longer time.
Here's the braising liquid recipe for 700g of pork:
10-15 stalks spring onion / scallion to cover bottom of pot
30g ginger (sliced thinly)
50g rock sugar (or brown sugar)
2 bay leaves
1 cinnamon stick
1 star anise
5g cloves
250ml Chinese white rice wine (or sake)
45ml Shaoxing wine
125ml light soy sauce
45ml premium dark soy sauce
add water to same height of pork belly
The only reason I'm asking is because 100g of sugar seems like a lot
