They're a quick to prepare, tasty, nutritious and, normally, very cheap source of protein that's also very useful in baking. People will adjust their egg consumption accordingly, but there's some understandable lag time. Habits take time to change.

They're also a staple food, so it's understandable that they're often reported on and used as a sort of barometer for inflation, since they're typically so cheap.

For reference, we go through roughly a dozen eggs a week between two people

There's a number of products I get off Aliexpress that simply aren't available in the US. Namely braided fishing lines meant for the Japanese market. They come in high vis colors and are thinner and stronger than products available Stateside. Berkeley has a somewhat similar product, but the color fades or isn't available in similar colors, it's thicker and less strong. It's not just a cost issue.
