I might be falling for bait here, but what's the rest of the line? Not a DAY goes by that what?
that they think about that having happened. it's cut off for comedic purposes, and probably further exaggerated (as in, they randomly remember about it from time to time, not literally think about it every day).
The cutoff after the comma suggests they're about to embark on a long passionate rant, I think that's the heart of the joke
So the general idea is "wow, the AUDACITY of this bitch" as if communicating via "memes" is a chore.
