Beautiful in spring and summer, but barren and stick like during winter and fall. Do people prune these back when they die off?

They may take some frost damage which will leave dead ends and yeah you just prune it back.

Oh - I never realized they had any scent.

it's faint but distinct. my brother in law also feels the same about their scent
