I just moved in from lemmy.world, and I found that a few posts and comments have hearts that are counted/added at the same time as upvotes (can't add them separately) What are these

Hearts = upvotes - downvotes

I remember that previously it would have the score written without the heart... I did not notice that change.

Must depend on your client and/or instance settings - I see raw up/down vote counts.

Additional question, if I may? I joined kbin and was told to use boost instead of upvote (though both buttons were there). I'm now on mbin [fedia and melroy, RIP kbin] and have the same boost and upvote buttons available. Am I supposed to boost or upvote on mbin?

Upvoting should be your default. Boosting is more like a "retweet", where you are publicly reposting something on your profile.
