Honestly it always bums me out a little when movies like this go straight to their biggest villain or story. They should start smaller and build to the big stuff.

When should something no longer be considered a spoiler? In general use your best judgement. If want something more specific,
- For films, wait until it's been released to streaming for at least a few weeks.
- For TV shows, consider the whole season as a spoiler until the last episode of the season has aired, then wait a few weeks.

This might be the exception though.
So far, none of the previous movies were smart enough to go right into a proper FF story without having to dick around with an origin section.
Since part of this movie is also bringing the FF into the MCU as much as it is telling an FF story, if they do it right, it could be exactly the right way to do both.
Leading off with Galactus, you get to see the FF at their best, while also showing their limits. If it was only going to be a series of FF movies, that would suck. But as they weave in and out of future MCU arcs, the chances of seeing this kind of story would go down. So having it be the first FF MCU movie may be awesome.

People forget that Galactus did not appear until FF #48-50.
But what else could they do? Doom is off the table unless this introduces the alternate universe Tony Stark as Doom.
Annihilus? But then you'd have to do the Negative Zone which may be too much for an intro movie.
Super Skrull? Done on Disney+ for Secret Invasion.

I'm not super familiar with Fantastic Four villains, but who all is there that they haven't used/don't already plan on using?
Wikipedia has a list.
Honestly issue #1 has "Mole Man and his Moloids: An underground leader of Subterranea, who plans to take over the outer world that rejected him. Rules over different creatures and has access to highly advanced technology." That could be a fun place to start.
Problem:
In what way is that a problem?
Hard to do Mole Man when people will accuse you of ripping off the Incredibles.

Those people would be dumb and if they can't even figure out that The Incredibles are inspired by the FF then they were never gonna watch the movie in the first place. The whole reason Marvel got popular in the first place was that they made movies that comic fans wanted to see and the comic fans brought their families and friends

The Rise of Skywalker should have been lesson enough for Hollywood about why there's no point planning your movie around what you think will get the Twitterverse the least mad, because they'll get mad anyway
Hollywood in general and Disney in particular seem to be struggling to understand who their target audience actually is. There's a difference between making a movie accessible and catering to the lowest common denomimator.
They're gonna rub some dirt in your eye.
