While I don't have a source for it, afaik only the instance you use knows your ip. The rest just see your post proxied through them
The main reason I use jellyfin over plex is just because they only host my media, nothing else. None of the plex pass bs cluttering it up

I used to use Infinity, but with the api changes I use Jerboa now (just for a different service :p)
afaik 0.18.0 is supposed to release tomorrow, idk why Jerboa would be requiring it though
