Nah this is just cope. Vegans come from all walks of life.
Ease of doing something or degree of missing it doesn't really tip the moral scales much when compared to the yawning abyss of horror that is farming. Plenty of us loved all the hedonistic pleasures of carnism, just once you realise what you're doing it's completely indefensible and change is required.

Nutritious meals based on lentils/legumes are astonishingly cheap. wtf are you smoking? mock sausage etc is a luxury good, it is not a standard feature in any diet.

What creatures do the honey bees starve out? Are bee farms hotbeds of disease? How are sick hives treated? Do bees defend their honey? What are the bees fed instead?

This is the stupidest thing I've ever read. It's almost into not even wrong territory. I think you should contact a philosophy department and ask them why they haven't considered this.
You're probably just not eating rich enough food! If your normal meal is something like say spaghetti bolognese and you take out the beef and cheese and just throw in some lentils for an equivalent mass they have 1/3 the calories! Not to mention cheese is incredibly energy dense.
Usually, proteins tend to work out if you're using lentils/legumes in reasonable amounts. They tend to beat meat on a gram for gram basis just on raw numbers but be much lower energy to make up the difference so you need some fats in there. This is where stuff like nuts and seeds come in.
If you're also suddenly increasing fibre intake that can irritate your gut and make it move stuff a little too fast which can make you feel hungry.

Eh, this is a little simplistic. While it is indisputably true that you have to look at per capita emissions and that chinese manufacturing makes loads of the stuff made that second point needs more exploring.
Because capitalism is a garbage, nightmare system manufacturing gets sent, in general, to the cheapest manufacturer. The fantasy is this represents the most awesome, magical, and clever business but IRL it usually has more to do with loosest tax, safety, and environmental laws.
So you can't view the manufacturing as some selfless sacrifice of emissions, there may be government policies in play meaning idk dirty power is really cheap or whatever.
I basically think country vs country is a fucking stupid lens to view this through in general, because for all some fakelandian business might dump uranium in a river fakelandia is probably the way it is for reasons that non uranium dumping countries aren't guilt free in.
