I'm not very good at edge highlighting so thought it might be easier to practice on a massive model

That looks really awesome. Pardon my ignorance but what miniature/gam is this? The sculpt looks fantastic and the colour scheme / highlights look great.

Do you dry brush your miniatures for contrast before painting? Looks great!

On regular sized models yes, prime dark and then a grey drybrush and a white drybrush. With this big boi I just did a zenithal prime with a can of white primer over a dark prime.
